This is a recipe I found on tasteofhome.com and tweaked to fit what I have on hand!!
1 cup butter (I used Best Life Buttery Blend)
1 cup sugar
1 cup dark brown sugar
1 egg
1 tsp vanilla extract
2 cups self rising flour, less one tablespoon
1 tablespoon ground flax seed
1 cup old fashioned oats
2 tsp ground cinnamon
pinch sea salt
1 cup canned pumpkin (not pumpkin pie filling)
12 oz semi sweet chocolate chips
Cream butter and sugars, mix in egg and vanilla. Blend in flour, flax seed, oatmeal, and seasonings. Combine with pumpkin, then stir in chocolate chips. Drop by spoonful on prepared baking sheet. Bake at 350 for 9 - 12 minutes. These are cake-like and absolutely delicious!! I drizzled them with cream cheese frosting for a little extra sweetness, but they are great without too!
The recipe is supposed to make 4 dozen cookies - but I made them larger so I got about 30 cookies. Yummmmmmmy!!
