Yesterday at Publix I got a great deal on lots of Italian food staples, so I decided to make this family favorite for dinner. I served it with steamed beans, steamed broccoli & carrots, plus a loaf of crusty bread dipped in olive oil. It was an amazing meal!
Crustless Calzone Casserole ~ serves 6
1 32 oz tub fat free ricotta cheese
liberal sprinkles of Italian seasoning, parsley, onion & garlic powder
1/2 cup cheese - I usually use mozzarella, this time used cheddar
1 pkg meatballs and/or pepperoni
1/4 c cheese for topping casserole
1 cup marinara sauce
Mix the seasonings with the ricotta cheese, add in 1/2 cup shredded cheese, combine. Spread ricotta mixtue into greased casserole dish, top with meatballs or pepperoni slices. (Sink them about 1/2 way into the cheese mixture). Bake at 350 degrees for about 35 - 40 minutes until cheese is bubbly. Remove from oven, spoon marinara sauce over the top, then sprinkle with the cheese. Replace in oven for about 5 minutes or until cheese on top has melted. Rich, filling and delicious!!
That looks yummy!
