Crustless Calzone Casserole ~ low carb Italian feast!! : )

Several years ago, Randy & I were eating low-carb, and craving pizza.  Our local pizzeria made us a delicious "crustless calzone" that fit our eating plan, and it was so good! I made my own variation and we enjoy it when we want something filling but not carb-y (is that a word?! lol).

Yesterday at Publix I got a great deal on lots of Italian food staples, so I decided to make this family favorite for dinner.  I served it with steamed beans,steamed broccoli & carrots, plus a loaf of crusty bread dipped in olive oil. It was an amazing meal!

Crustless Calzone Casserole ~ serves 6

1 32 oz tub fat free ricotta cheese
liberal sprinkles of Italian seasoning, parsley, onion & garlic powder
1/2 cup cheese - I usually use mozzarella, this time used cheddar
1 pkg meatballs and/or pepperoni
1/4 c cheese for topping casserole
1 cup marinara sauce

Mix the seasonings with the ricotta cheese, add in 1/2 cup shredded cheese, combine.  Spread ricotta mixtue into greased casserole dish, top with meatballs or pepperoni slices.  (Sink them about 1/2 way into the cheese mixture).  Bake at 350 degrees for about 35 - 40 minutes until cheese is bubbly.  Remove from oven, spoon marinara sauce over the top, then sprinkle with the cheese. Replace in oven for about 5 minutes or until cheese on top has melted.   Rich, filling and delicious!!
